Spanish tortilla

Tortilla (pronounced tortiya if you're from northern Spain or tortisha from the south and from S. America).


It's such a simple dish, although it takes a while to get the potatoes cooked through. When I made it last night, I realised that it's actually a great frugal, waste-not, and whats-left-in-the-fridge type of meal.

All you need are potatoes, eggs, seasoning. That's the classic version. I add onions, oregano, and a dash of milk to the eggs. But you could also add all types of left-overs, such as thinly sliced peppers, sweetcorn, shredded meat such as roast chicken, ham or salami. Since i'm a vegetarian i prefer use mushroom as "meat". It's really as versatile as an omelette, although I suppose it's no longer Spanish tortilla, but who cares right?



Lightly and slowly fry/sauté about 2cm cubes of potato in olive oil, then add onions and continue to fry until onions are soft and potatoes are cooked.
Season.
Beat eggs, add a small dash of milk, throw the eggs into the frying pan.
If you're making it thick, you can transfer the pan under a grill to finish off the top. Or do it how my family does, slide the tortilla onto a plate, flip the pan over and place over the plate, now flip everything over again so that now the plate is in the pan. Don't try this unless the tortilla is well cooked on the bottom and there's not much runnyness left.


Blueberry tea smoothie




ingredients
1/4 cup frozen blueberries
1/2 cup fruit tea of your choice
1/2 cup heavy cream
1/2 pro-biotic drinkable yoghurt
3-4 tsp equivalent of sugar


method
1. Make the tea and add the sweetener in long before you need it. (night before)
2. Whip up cream until thick, add berries and whip again. (can use a hand mixer)
3. Add yoghurt and cold tea, mix.

nutrition: (will depend a lot on yoghurt and sugar used)

46g fat
7.5g protein
11g net carbs
 And of course other berries work too.... I just love purpley things.....

Coconut Flour Pancakes

Makes 6, 3" pancakes. Small but filling.



Ingredients:

1/4 cup coconut flour
1/2 tsp baking soda
 
pinch of salt (optional)
1/4 tsp cinnamon (optional)
 
1-2 Tablespoon sugar (ordinary or equivalent in sweetener)
3 eggs
1/4 cup milk
1 tsp vanilla extract


Method:
Mix wet ingredients, beginning by beating eggs until frothy.
Mix dry ingredients and then stir through wet ingredients.
Let everything sit for five minutes. (for coconut to hydrate)

Oil/butter your pan and heat over medium heat.
 
Pour about a 1/4 cup of batter for each pancake, allow the bottom to brown before flipping them over.


The whole batch amounts to approximately:
9 g net carbs
 

Coconut flours vary quite a bit in their carb count, do check.
